Saffron are the fine pistils of the flower of Crocus sativus. Saffron is considered the most expensive spice in the world as the flowers must be hand-picked not to damage the pistils and the latter must be separated from the flowers manually as well. Up to 200,00 flowers of saffron crocus are used to produce 1 kg of saffron. Saffron grants a bright yellow color and a unique, slightly bitter taste to food. It is used as seasoning in confectionery, meat, fish, rice and vegetable dishes, soups and sauces.
