White (sheng/raw) Pai Mu Tan tea – pressed and matured. Recently, matured white tea has become popular, so it started to be pressed in the same way as Pu-erh tea. Pressed tea can mature slowly, and over time its taste becomes sweeter and milder.

White tea is the tea of the softest and youngest leaves, minimally processed and therefore highly valued by lovers of delicate teas. White tea leaves are only picked by hand before their buds have fully opened – they are still covered with silvery fluff. The harvested leaves are spread on bamboo grates and dried naturally, and then carefully dried at a low temperature. After drying, the silver fluff acquires a white color (hence the name of white tea, which is translated from Chinese as “White Peony”).
