Nutmeg is made from the seed of the nutmeg and has been used as spice for more than 5,000 years. Nutmeg has been brought in to Europe from Indonesia. When dried, the seed of the nutmeg tree can be used to flavor dishes. Grated nutmeg is added to sweet and spicy foods, such as pies, puddings, cheese, pasta, chicken, soups containing tomatoes, peas and beans. It goes well with cabbage, spinach, broccoli and eggplants, also fried or boiled potatoes and winter squash. When heated, nutmeg tastes especially unpleasant and its aroma evaporates. Thus, it is best to add nutmeg at the very end of cooking. It is recommended to keep nutmeg in tightly sealed containers away from direct sunlight.
