Lapsang Souchong

Lapsang Souchong is smoke-dried black tea originating from Fujian Province, China. Tea leaves are smoke-dried over a pinewood or cedarwood fire. Prior to their drying in bamboo baskets over a pinewood fire, tea leaves are rolled and fermented.

Legend says that Lapsang Souchong was developed as an ‘accident’. Back in the Qing dynasty, peasants failed to dry tea leaves before the imperial army unit arrived. When the soldiers left the village, one peasant made a fire underneath the drying tea leaves, attempting to quicken the process. The smoke from the fire gave the tea leaves its specific taste.
